Sweet Potato Citrus
4 oranges
2 grapefruit
1 stick butter
1/4 cup orange blossom honey
1/4 cup sugar
5 1/2 lb sweet potatoes
1 tsp salt
2 tsp grated orange rind
2 tsp lime rind
1. Cut (do not peel) rinds from grapefruit and 2 oranges.
Separate sections by cutting between membranes.
Squeeze remaining membranes over a measuring cup.
Halve other two oranges and squeeze juice to
equal 1/2 cup and add to reserved juices.
2. Heat butter, honey and sugar in a skillet over med-high heat
5 minutes. Add potatoes, reserved juices, orange rind and salt.
Cover and boil. Reduce to med-low and simmer,
covered for 25 minutes, or until potatoes are tender.
Uncover and cook over med-high until liquid evaporates
and thick glaze forms. Stir in fruit and lime rind.
