Carmelized Oranges
9 oranges
1/2 cup sugar
1 Tbsp butter
Ground cinnamon
1. Squeeze 1 cup of juice from 3 oranges.
2. Cook sugar in a heavy saucepan until it begins to turn
golden (caramel),about 10 minutes. Tilt pan carefully and
add orange juice. Cook until caramel is dissolved.
3. Cut peel and pith from remaining 6 oranges (do not peel)
and cut into sections.
4. Heat butter in a non stick skillet over med-hig heat.
Saute oranges until golden, 2-3 minutes on each side.
Add caramel sauce and cook until heated through,
1 minute. Remove from pan and sprinkle with cinnamon.
Note: Great when served over steamed, sliced sweet potatoes
or white rice.
