Orange Ginger Sauce
1/4 cup minced shallots
1 Tbsp minced ginger
2 Tbsp orange zest
1 cup dry white wine
1 cup fresh orange juice
1/2 cup heavy cream
2 sticks cold unsalted butter, cut into pieces.
1 tsp soy sauce
Salt
1/8 tsp wasabi powder
In a medium saucepan combine first 5 ingredients and bring
to a boil. Reduce heat and simmer until reduced. Add cream
and cook until reduced again. Whisking constantly, add butter
one piece at a time, waiting until each is incorporated before
adding another. Continue whisking until sauce is smooth.
Add soy and salt to taste. Add wasabi and serve warm.
Great on chicken or salmon!
