Orange Basmati Salad
2 cups water
1 cup uncooked basmati rice
1 tsp salt, divided
1/4 cup white wine vinegar
2 tsp grated orange rind
1/4 cup fresh orange juice
1 1/2 Tbsp extra virgin olive oil
1/4 tsp fresh ground black pepper
2 cups orange sections
1/2 cup pomegranate
1/4 cup toasted pine nuts
3 Tbsp chopped fresh parsley
1. Bring water to a boil in a medium sauce pan over med-high
heat. Add rice and 3/4 tsp salt; cover and reduce heat.
Simmer for 15 minutes or until liquid is absorbed. Remove
from heat and fluff rice with a fork; Cool completely.
2. Combine 1/4 tsp salt, vinegar, and next 4 ingredients,
stirring with a wisk. Combine rice, vinegar mixture and
remaining ingredients in a large bowl tossing gently
