Orange Avocado Salad with Honey Dressing
4 oranges
1 Tbsp fresh ginger, finely chopped
3 Tbsp mayonnaise
1 tsp dijon mustard
2 tsp orange blossom honey
Fresh ground sea salt and black pepper
2 medium shallots, finely chopped
2 Tbsp extra virgin olive oil
2 avocados
1 Tbsp chopped fresh mint leaves
1 Tbsp chopped fresh cilantro
4 whole Boston lettuce leaves
4 whole red lettuce leaves
1. Use a sharp knfe to cut the peel from oranges. Then slice
between the membranes to remove orange segments. Do this
over a bowl to catch the juices and reserve the segments
separately. Squeeze what's left of the membranes over bowl
and remove seeds. You should have about 3/4 cup of juice.
2. Combine ginger, mayonnaise, mustard and honey with 1/2 cup
of the juice in a bowl. Whisk in oil until smooth and season
to taste with salt and pepper.
3. Cut avocados lengthwise around large pit in the middle.
Remove pit and discard. Wedge a spoon between avocado
flesh and skin to remove avocado in one piece. Cut into
1 inch pieces and place in bowl with honey dressing. Add
shallots, mint and cilantro and toss lightly without breaking
up the avocado.
4. Divide lettuce leaves onto 4 plates. Spoon acovado evenly
onto lettuce, leaving some dressing in bowl. Top with orange
sections and drizzle with remaining dressing.
Serve immediatley.
