Orange Pecan Pie
Unbaked 9 in. pie shell
1 fresh orange (medium size)
1 ½ cups brown sugar
1 cup light corn syrup
3 tablespoons butter
3 eggs (well beaten)
1 ½ cups pecans (broken)
1. Cut orange into quarters and remove any seeds. Put orange
quarters, peel and pulp through a food chopper.
2. Combine ground orange with sugar and corn syrup in saucepan.
Bring to a full hard boil. Remove from heat. Cool slightly,
stirring occasionally.
3. Add butter and cool a little more, still stirring (about five
minutes). Blend in eggs and pecans, mixing thouroughly.
4. Pour into unbaked pie shell and bake in 350F oven for
approximately 40-45 minutes (or until set).
