Orange Peppercorn Filet Mignon
2 tsp grated orange rind
1/4 cup fresh orange juice
1/4 cup low sodium soy sauce
2 Tbsp brown sugar
2 Tbsp fresh lemon juice
2 Tbsp balsamic vinegar
2 tsp honey
1/2 cup chopped green onions
1/2 cup chopped fresh cilantro
2 Tbsp drained brine-packed green peppercorn
1 garlic clove peeled
2 tsp extra virgin olive oil
2 tsp sesame seeds, toasted
1/2 tsp salt
8 (4 oz) beef tenderloin steaks, trimmed
1/2 tsp salt
1/2 tsp black pepper

1. Prepare grill
2. For sauce, combine the first 7 ingredients in a sauce pan;
bring to a boil. Cook until reduced (about 6 min) Cool.
3. Place the next 4 ingredients in a food processor until finely
chopped. Add orange juice mixture, sesame seeds, and
1/2 tsp salt; pulse to combine; set aside.
4. Coat grill rack with cooking spray. Sprinkle steaks with salt
and pepper. grill steaks for 3 minutes on each side or until
desired doneness. Serve steaks with sauce and garnish with
cilantro sprigs.
