Orange Fried Chicken
1/3 cup flour
1 teaspoon salt
¼ teaspoon pepper
1 (2 ½ to 3lb) frying chicken, cut-up
Cooking oil
1 fresh orange (medium)
Combine flour, salt and pepper in paper or plastic bag.
Shake several pieces of chicken in bag to coat with
flour mixture.
Heat ¼ inch of oil in large, heavy skillet. Cut whole orange
into quarters and add to oil.
Cook chicken until thoroughly done.
When serving add fresh grated orange peel if desired.
