Poached Citrus with Rosemary Syrup
1/3 cup light brown sugar
1/3 cup water
1 tsp orange zest
1 tsp whole rosemary leaves
4 whole cloves
3 oranges,sectioned, peel and pith removed
3 tangerines,sectioned, peel and pith removed
1 Tbp orange liqueur
1 angel food cake
1 quart frozen yogurt
Combine sugar and water in a saucepan and bring to a boil
over med-high heat, stirring until the sugar dissolves. Reduce
heat and simmer for 10 minutes. Add zest, rosemary and
cloves. Simmer 5 minutes. Pour over orange and tangerine
sections and toss. Refrigerate 4 hours. Sprinkle with orange
liqueur. Divide cake into desert dishes. Put 1 scoop of frozen
yogurt on top of cake slices. Top with oranges and serve.
