Winter Fruit Compote
1 can pitted dark sweet cherries in syrup
1 tsp cornstarch
1 1/2 Tbsp orange blossom honey
1 Tbsp almond flavored liqueur or 1/2 tsp almond extract
1 ripe bartlett pear, peeled, cored and cut into 1 inch cubes
1 orange peeled into sections,membranes removed
1 tsp chopped fresh mint
1. Drain cherries reserving 1/4 cup syrup. Combine reserved
syrup and cornstarch in a small bowl; mix until smooth.
Add mixture to saucepan; bring to a boil over med-high
heat, stirring frequently. Reduce heat to simmer. As mixture
begins to thicken, stir in honey and liqueur.
2. Stir in pears, oranges and cherries. Cook 2 minutes or
until fruit is warm, stirring occasionally. Spoon into desert
dishes and sprinkle with mint. Serve warm.
