Orange Pound Cake
1 tsp unsalted butter, plus 1 stick, softened
1 tsp all purpose flour, plus 1 cup
1/2 tsp baking powder
1/4 tsp salt
1 cup sugar
3 large eggs
1 Tbsp fresh orange juice
1 1/2 tsp fresh orange juice
1 tsp vanilla extract
1. Preheat oven to 325 degrees.
2. Grease a loaf pan with 1 tsp butter and coat with 1 tsp flour.
3. Sift remaining flour, baking powder and salt in a bowl and
set aside. Mix butter and sugar in a bowl with a handheld
mixer until creamy. Add eggs and dry ingredients,
alternating small amounts. Add juice, zest and vanilla and
beat until just mixed.
4. Pour batter into prepared pan and bake 1 hour or until
golden brown on top and toothpick comes out clean when
inserted into middle. Let rest in pan for 10 minutes and
then run a knife around side of cake to loosen.
Turn onto cooling rack cool for 30 minutes before serving.
