Candied Orange Peel
6 navel oranges
4 1/2 cups sugar, plus extra
1 1/2 cups water
1. Cut tops and bottoms of the oranges off and score the
oranges into quarters, cut down into the peel and not
the fruit. Peel the skin and pith of the oranges in large
pieces. Cut peel into 1/2 inch strips. Place peel in a
saucepan and cover with cold water. Boil over high heat,
drain and repeat 2 times.Remove from pan.
2. Whisk the sugar in 1 1/2 cups water, bring to simmer and
cook for 9 minutes. Add the peels and simmer gently,
reducing heat. Cook until peels are translucent(45 minutes).
Do not stir or suagr crystals will form, swirl pan if necessary.
3. Drain peels and rool in sugar. Dry on rack for 4 - 5 hours.
