Orange Caramel Fudge
2 cups brown sugar
1/2 cup heavy cream
1/2 tsp baking soda
1 tsp butter
Zest from 1 orange
1 cup nuts (any kind you like)
1 tsp ground cinnamon
1. Line an 8x8 inch baking pan with aluminum foil and spray
with nonstick cooking spray.
2. Combine sugar, cream and baking soda in a medium
saucepan and stir over medium heat until sugar is dissolved.
Cook over med-high heat until mixture boils. Once mixture
boils, stop stirring and allow to cook to firm
ball stage(245degrees).
3. Remove from heat and add butter, zest, cinnamon and nuts.
Allow to cool to room temperature before stirring. Stir the
mixture until it thickens and loses its gloss.
4. Spread fudge in prepared pan and allow to set at room
temperature. Once set, cut into 1 inch pieces and serve.
